Information from the abstract
Numerous investigations have shown the inactivation of Clostridium botulinum by dielectric barrier discharge (DBD) cold plasma. Consequently, this study sought to examine the influence of DBD cold plasma on the inactivation of C. botulinum and the physicochemical and chemical characteristics of Monascus -containing Nham in comparison to the control group Nham. The C. botulinum levels were undetectable in both the control group Nham and the Monascus pigment-containing Nham after 200 kV DBD cold plasma treatment for 10 min, within the 12-h fermentation period. Moreover, DBD cold plasma influenced a reduction in the a* value while enhancing the water holding capacity (WHC) and myofibril fragmentation index (MFI) values in Monascus pigment-containing Nham throughout the fermentation process. The FTIR spectrum of Nham containing Monascus pigment, after undergoing DBD cold plasma treatment, displayed alterations in peaks associated with hydrogen bonding, specifically C–H, O–H, and N–H, which influenced the structural modifications of Monascus pigments or proteins interacting with reactive oxygen species (ROS) and reactive nitrogen species (RNS) generated by DBD cold plasma treatment. Principal component analysis (PCA) revealed that the eigenvalues of Monascus pigment-containing Nham subjected to DBD cold plasma therapy were markedly differentiated from other treatments, influenced by electrical conductivity, MFI, and WHC, with variable significance in projection (VIP) scores above 1. As a result, DBD cold plasma treatment might be replaced by nitrite in the large-scale manufacturing of Monascus pigment-containing Nham to prevent C. botulinum and improve tenderness and moisture retention in the product.
