Microbial Diversity and Chemical Dynamics in Karanda Juice Kefir During Fermentation

Thai researchers used karanda juice as a water-kefir substrate and tracked microbial and chemical changes during fermentation. Lactobacillus and Saccharomyces were dominant genera, formic acid was the main organic acid, and valeric acid was detected alongside trace short-chain acids.
